What is the difference between water and water activity?

Water content reports an amount under a particular method. Water activity is a different property describing the availability of water in a system. They are not interchangeable percentages. Also check whether a source defines moisture as a combined calculation that includes humectants. Use the actual method and definition when comparing formulations.
